INGREDIENTS
1 cup self-raising flour
½ cup caster sugar
½ cup desiccated coconut
125g butter, melted
TOPPING
¼ cup plain flour
½ teaspoon baking powder
½ cup caster sugar
½ cup glace cherries, chopped
½ cup chopped walnuts
½ cup shredded coconut
1 teaspoon vanilla extract
2 eggs, lightly beaten

METHOD
- Preheat oven to moderate, 180°C. Lightly grease an 18 x 28cm slice pan. Line base and sides with baking paper.
- In a large bowl, combine flour, sugar and coconut. Stir in butter until combined. Press mixture firmly into prepared pan to make the base.
- TOPPING. In a large bowl, sift together the flour and baking powder. Add sugar, cherries, walnuts, coconut and vanilla extract. Add eggs, mixing well.
- Pour over the base in the pan. Bake for 25-30 minutes or until golden. Serve cut into squares. Serve warm or cold.
